Rolled, tied, and seasoned with a traditional blend of garlic, fennel, rosemary, sage, and spices, this porchetta roast cooks up beautifully crisp on the outside while staying juicy and succulent inside. Because our pork is raised on pasture where animals can forage, root, and roam, the meat develops the deep, balanced flavor that makes this classic Italian roast so special.

Ingredients: Pastured Pork, Salt, Garlic, Fennel Seed, Rosemary, Sage, Black Pepper, Sugar, Thyme, Coriander, Chili Flake

Cooking Directions

  1. Thaw your porchetta roast in the refrigerator for 24–48 hours.
  2. Preheat oven to 450°F.
  3. Pat the roast dry and place it on a wire rack over a roasting pan.
  4. Roast at 450°F for 30 minutes to achieve a crisp exterior.
  5. Reduce heat to 325°F and continue cooking for 1.5–2 hours, or until the internal temperature reaches 145°F.
  6. Let rest for 15–20 minutes before slicing.
